Adapted from Joy of Cooking – these buttery Spritz cookies are a delicious family favorite for Christmas.

- 1 cup butter
- 1/2 cup sugar
- 2–1/4 cup flour
- 1 tsp almond extract (or any other extract you like)
- 1/2 tsp salt
- 1 egg
- Heat the over to 400°F.
- Cream softened butter and sugar.
- Add egg and remaining ingredients and stir to mix well.
- Fill the cookie press with dough until full.
- Form shaped on an ungreased cookie sheet.
- Shake colored sugar onto each cookie if desired.
- Bake 6-9 minutes in the middle rack in the oven. the edges of the cookies should be firm and golden but not brown.
- Remove from the pan and cool before eating.
