- 2 limes, juiced
- 1/4 cup lemon juice
- 1/2 cup orange juice
- 1 TBSP kosher salt
- 1/2 TBSP black pepper
- 2 tsp cumin
- 1 tsp red chili pepper flakes
- 1 tsp chili powder
- 2 tsp garlic powder
- 1 tsp paprika
- 1/2 cup chopped cilantro
- Mix all ingredients in a bowl until blended.
- Place the chicken in a glass bowl or baking dish. Pour marinade to cover the chicken. Place in the refrigerator for 1 to 3 hours.
- Prepare a charcoal grill with a pile of 25-30 briquettes in the middle of the grill.
- Remove the chicken from the fridge. Place on a hot grill, just away from the coals to prevent flare ups when the chicken drips onto the coals.
- Cook until the internal temp of the chicken is 165°F. Use a meat thermometer to properly measure the temperature of the chicken.
- Remove the chicken from the grill.
