Vegetarian Eggplant Lasagna – it’s Paleo-lite #‎UltimateRecipeChallenge‬

Ingredients

  • 1 Eggplant
  • 34 Medium Zucchini
  • 2 cups Shredded Mozzarella
  • 1 jar Pasta sauce
  • 1/2 cup Shredded Parmesan cheese
  • 1/2 Medium White Onion diced
  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Oregano
  • 1/2 Tbsp Basil
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt

Instructions

  1. Cut eggplant and zucchini into thin rounds
  2. Toss the vegetables with the spices
  3. Layer the ingredients into a 9 inch baking dish starting with the eggplant, then pasta sauce, then cheese, then zucchini and repeat until the dish is full
  4. Save about a quarter of both cheeses to put on top of the dish
  5. Cover with foil and bake in a 400 degree Fahrenheit oven for 35 minutes
  6. After 35 minutes remove foil and sprinkle the remaining cheese on top of the dish and bake for 10 more minutes or until the the cheese is melted
