Mexican omelet recipe with homemade guacamole.

Ingredients

  • 1 tsp butter
  • 2 eggs
  • 2 TBSP half and half (can substitute water or milk to lower fat)
  • 1/4 shredded cheddar and jack cheese blend
  • 1/4 cup diced tomatoes
  • 1/4 Knorr creamy guacamole (recipe above)
  • salt and pepper to taste

Instructions

  1. Whisk the eggs, half and half, and salt and pepper until blended.
  2. Melt butter in small saute pan on medium high to high temp, swirl to coat the entire bottom of the pan.
  3. Pour egg mixture in the pan. Allow to cook until the eggs are firm on the bottom of the pan, about 2 minutes.
  4. Put cheese, tomatoes, and guacamole on top of the eggs.
  5. Fold in half and slide the omelet onto a plate.
