Shredded Pork Mexican Salad

YUM! Shredded Pork salad with creamy guacamole and pear tomatoes. No dressing necessary - by jenniferppriest

And easy no-dressing salad with shredded pork from leftover slow cooker pot roast.

Ingredients

  • 1 TBSP of Knorr® + Best Foods® Creamy Guacamole
  • 2 cups dark salad greens or mesclun salad mix
  • 1/2 cup shredded pork from the “kitchen sink” slow cooker pork loin recipe
  • 10 pear tomatoes, halved
  • 1 TBSP cotija cheese

Instructions

  1. Layer the lettuce onto a plate.
  2. Add the pork.
  3. Top with guacamole.
  4. Scatter the tomatoes on the plate.
  5. Sprinkle with cotija cheese.
