- 4 lbs boneless skinless chicken thighs
- 2 TBSP Knorr Caldo de Tomate con Pollo Bouillon
- 4 cups water
- 1 red onion, diced
- 1 – 8 oz jar prepared mole sauce
- 2 tsp kosher salt
- 2 tsp black pepper
- 2 tsp garlic powder
- Creamy Guacamole Recipe
- Place chicken in the bottom of the slow cooker. Cover with spices, mole sauce, and vegetables.
- Mix the water and bouillon until blended. Pour over chicken in slow cooker.
- Cook on high for 4 hours (or low for 8 hours) or until the chicken shreds easily with a fork.
- Serve over rive with a salad and dollop of creamy guacamole.
