How to make Keto Chicken Fajita Bowls
Have you ever made a dish that tasted so good, you surprised yourself? That was my husband's reaction to these keto chicken fajita bowls!
I miss visits to the burrito place that makes burrito bowls since I went paleo and keto. Their bowls don't even taste good to me anymore. When my husband had this idea for keto fajita burrito bowls, I was skeptical. But he surprised me! These bowls are so flavorful, you'll want to meal prep them for several days a week.
Preparing the chicken and rice for the burrito bowls
These keto burrito bowls have two main components. The rice forms the base of the bowl. And the chicken and other ingredients form the toppings. You can change up the topppings to create countless flavor combinations.
Keto Cauliflower Rice
This keto-friendly version of a burrito bowl is built on a base of Mexican cauliflower rice. We used Knorr Selects® Chicken Granulated Bouillon to give the cauliflower the authentic flavor of traditional arroz rojo. The “rice” still tastes like cauliflower but it packs the flavor I remember from my grandma's Mexican rice recipe growing up.
Once you've prepared the rice, you'll need to prep all of the burrito bowl toppings.
Keto Fajitas
Fajitas are traditionally made with sliced bell peppers and onions. You can prepare these fajita bowls with onions for a paleo friendly meal. Keto dieters may want to skip the onions. Onions have about 7.6g of carbs per serving compared to 2.9g of carbs per serving of bell pepper. Check out this guide to see which vegetables make sense for your macros on keto.
We prepared this recipe with the onions. The rest of the family eats the bowls with the onions. I remove the onions from the fajita vegetables on my bowl to keep my carbs in check.
Slice the onions and bell peppers into thin strips. Heat a cast iron skillet over high heat until smoking. Then add the onion and peppers. Cook over high heat stirring constantly for about 2-3 minutes until the onions and peppers begin to char.
Add 1 Tablespoon of butter to the onions and peppers and turn down heat to medium. Cook for an additional 3-5 minutes or until the onions and peppers are soft. Remove the fajita vegetables from the skillet and set aside until it's time to assemble the fajita bowls.
Keto Burrito Bowl Chicken
The secret to juicy chicken in this recipe is the marinade. Place the chicken in a bowl. Add the juice of 1 lime, all of the spices, and the Knorr Selects® Chicken Granulated Bouillon to the chicken. Gently toss to coat the chicken in the marinade. Cover and chill for 30 minutes.
Cook the chicken in the same skillet as the fajita vegetables. The flavors from the fajita vegetables will add extra flavor to the chicken. Add 1 Tablespoon of butter to the hot skillet. Cook the chicken thighs for about 5-8 minutes per side or until the chicken reaches an internal temperature of 180℉.
Making Chicken Fajita Bowls
Place 1 cup of  Mexican cauliflower rice in the bottom of a bowl. Slice one chicken thigh into thin strips and arrange on top of the rice.
Add the following to the fajita bowl:
- Fajita vegetables
- Sliced avocado
- Kalamata olives
- Sliced grape or cherry tomatoes (yes, tomatoes are keto!)
- Cilantro as a garnish
- Lime wedges as garnish
This keto chicken fajita bowl has become one of our favorites for meal prepping because it reheats so well. Reserve the limes, avocado, and tomatoes to the side and add to the burrito bowl after you reheat it.

Ingredients
2 lbs boneless skinless chicken thighs
1 red onion medium (omit for strict keto)
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 Tbsp Knorr Selects® Granulated Chicken Flavor Bouillon
¼ tsp black pepper
½ tsp garlic powder
¼ tsp chili powder
1 tsp cumin
1 lime juiced
2 Tbsp butter
4 cups of Keto Mexican Cauliflower Rice
12 grape tomatoes
2 avocados
20 kalamata olives, halved
fresh cilantro to garnish
lime wedges to garnish
Instructions
- Place chicken in a bowl or plastic  bag.
- Add Knorr Selects Granulated Chicken Bouillon and spices to the chicken.Â
- Add juice of one lime to chicken.
- Mix chicken with spices and lime juice. Cover and chill to marinate for 30 minutes to an hour.
- Slice onion and bell peppers into thin strips.
- Heat a cast iron skillet over high heat until smoking. Add onion and peppers. Cook over high heat stirring constantly for about 2-3 minutes until the onions and peppers begin to char.
- Add 1 Tbsp of butter to the onions and peppers and turn down heat to medium. Cook for an additional 3-5 minutes or until the onions and peppers are soft. Then remove from the skillet.
- Add 1 Tbsp of butter to the hot skillet. Place chicken thighs in the hot skillet. Cook the chicken thighs for about 5-8 minutes per side or until an internal temperature of 180℉.
- Slice chicken and place in a bowl of cauliflower rice (or rice for non keto eaters), with the peppers, sliced avocados, olives, and tomatoes. Garnish with chopped cilantro and lime wedges.
