Make this quick pozole rojo recipe as a hearty meal any time of year. On cold days, we love to keep a pot of pozole gently simmering on the stove so we can snack all day long. It's a delicious, fast recipe you can make in less than an hour thanks to Knorr bouillon. Since this recipe cooks pretty quick, the meat isn't as tender as we'd like; for more tender meat, allow the soup to simmer longer.

Yum, right?! This recipe makes enough for 8 large bowls of pozole, which is two meals in my house of four. Thing is, we usually want to get seconds. We are eating lots of veggies with all the toppings we put on the pozole so it's a good thing. That's one of my favorite things about pozole: the toppings!
6 Toppings for Pozole Rojo
Everybody I know puts different vegetables on their pozole rojo to customize it. Just last week, we were at Disney California Adventure's Disney Festival of Holidays where we had pozole topped with shredded cabbage and carrots. My friend's mom puts onions, lemon juice, and cilantro on their pozole. Fresh veggies add a delicious crunch and refreshing flavor to the soup. Here are 6 ideas for toppings for pozole rojo that you can combine to find a flavor combination that you love:
Lemon or Lime Juice
Serve lemon or lime wedges with the soup. The juice brightens the flavor and gives the soup a fresh taste.
Shredded Cabbage
Cabbage lends crunch and in the hot soup, it softens slightly. The cabbage can give the soup more body, making it feel more hearty. I mean, it's already pretty hearty, but if you really wanna pack in the fiber, then cabbage is a great option.
Chopped Herbs
Cilantro is to go-to for most Mexican food but you can also serve pozole rojo with chopped Italian parsley or oregano for a slightly different flavor. Or mix all three! You can also use menudo mix or dried oregano as a topping; rub the dried leaves between your hands to grind them even smaller and then sprinkle onto the soup.
Sliced radishes or carrots
If you're looking for a lot of crunch, add thinly sliced radishes or carrot chips to the pozole. They will soften in the warm soup but still add crunch and texture.
Chopped Onions
Onions are great for adding crunch and flavor to pozole rojo. We chop our onions in slightly larger chunks so we'll get the crunch from them while we eat!
Avocado Chunks
Add chunks or slices of avocado to pozole just like with chicken tortilla soup. The creaminess of the avocado pairs well with spicy pozole; soak dried ancho chiles then blend in a blender, adding to the soup to make it spicier.
Most of the vegetables will soften over time when added to the hot soup. We add the vegetables to the top of the soup just before eating. You can set out bowls or plates with each of these fresh toppings on them so everyone at the table can customize the soup to their liking. We topped this bowl of pozole rojo with chopped Italian parsley, sliced radishes, and diced onions with a squeeze of a lime wedge to really bring out all of the flavors. Serve with warm tortillas for a full meal!
