Yum, right?! This recipe makes enough for 8 large bowls of pozole, which is two meals in my house of four. Thing is, we usually want to get seconds. Everybody I know puts different vegetables on their pozole rojo to customize it. Just last week, we were at Disney California Adventure's Disney Festival of Holidays where we had pozole topped with shredded cabbage and carrots. My friend's mom puts onions, lemon juice, and cilantro on their pozole. Fresh veggies add a delicious crunch and refreshing flavor to the soup. Here are 6 ideas for toppings for pozole rojo that you can combine to find a flavor combination that you love:

Lemon or Lime Juice

Serve lemon or lime wedges with the soup. The juice brightens the flavor and gives the soup a fresh taste.

Shredded Cabbage

Sliced radishes or carrots

If you're looking for a lot of crunch, add thinly sliced radishes or carrot chips to the pozole. They will soften in the warm soup but still add crunch and texture.

Most of the vegetables will soften over time when added to the hot soup. We add the vegetables to the top of the soup just before eating. You can set out bowls or plates with each of these fresh toppings on them so everyone at the table can customize the soup to their liking. We topped this bowl of pozole rojo with chopped Italian parsley, sliced radishes, and diced onions with a squeeze of a lime wedge to really bring out all of the flavors.
