Today I am sharing two easy, fast snack ideas that everyone will love at the party or that the family can enjoy every day this summer: Triscuit Pizza Nachos and Mini Coca-Cola™ Floats!
Doesn't that look delicious? These don't last 10 minutes in my house- everyone loves to gobble them up! The beauty is that these Triscuit Pizza Nachos can be made in minutes and have lots of yummy vegetables hidden in the mix. Double the batch for a party or potluck.
As  I mentioned before, I stopped in to my local Stater Bros. Market to get the ingredients for this recipe. Stater Bros. is one of my all time favorite grocery stores – I grew up going to “Staters”! Get all of the ingredients for these two recipes, Triscuit Pizza Nachos and Mini Coca-Colaâ„¢ Floats, at your local Stater Bros. How to make Triscuit Pizza Nachos
The kids love nachos but even my kids are looking for a detour from tortilla chips and nacho cheese sauce. These Triscuit Pizza Nachos feature the flavors of pizza and the party-friendly convenience of nachos plus they are packed with vegetables and fiber! Did you know that one serving of Triscuit crackers has 3 grams of fiber? Top it with all the fresh vegetables in this recipe for even more yummy benefits! The kids will love the pizza flavors that come from the cheese, pastrami, and basil combination and adults will love the touch of spinach, fresh salsa, and Triscuit crackers.
Here's how to make Triscuit Pizza Nachos:
Start with a clean medium sized baking sheet. Add a layer of foil, crinkling it to create an uneven surface for the Triscuit crackers to rest on. This will create hills and valleys so the nachos look more like nachos. Top with shredded cheese, sliced olives, julienned salami, crushed tomatoes or drained salsa, fresh spinach leaves, and sliced fresh basil. Bake at 350°F for 6 minutes or until cheese melts. Serve on a platter everyone can pull from to eat. Garnish with a sprig of fresh basil.  This dish is great for parties, graduation, and more with the pizza flavor kids love and veggies that adults crave.

Ingredients
- 1 box of Triscuit crackers
- 1 cup of julienned salami
- 12–15 whole olives
- 1 cup of fresh spinach
- 8 leaves of fresh basil
- 1 cup of salsa, drained
- 1 cup of shredded cheese (jack, cheddar blend)
Instructions
- Start with a clean medium sized baking sheet.
- Add a layer of foil, crinkling it to create an uneven surface for the Triscuit crackers to rest on. This will create hills and valleys to the nachos look more like nachos.
- Drain the salsa to remove excess water.
- Chop or tear the spinach and basil leaves into 1″ sized pieces.
- Top Triscuit crackers with shredded cheese, sliced olives, julienned salami, crushed tomatoes or drained salsa, fresh spinach leaves, and sliced fresh basil.
- Bake at 350°F for 6 minutes or until cheese melts.
- Serve on a platter everyone can pull from to eat.
- Garnish with a sprig of fresh basil.

How to make Mini Coca-Cola™ Floats
Mini Coca-Cola™ Floats are incredibly simple to make.
For parties, serve in small Coca-Colaâ„¢ style glasses with colorful straws.
Add one small scoop of ice cream in each glass.
Slowly pour Coca-Cola™ over the ice cream, slowing as the foam rises. Add colored straws for a fun mini treat, perfect for a hot summer day! These pair wonderfully with the Triscuit Pizza Nachos Recipe above.
