Capirotada Yogurt Cups with Yoplait Greek 100 #StockUpConOfertas

I was never a big fan of capirotada, a Mexican bread pudding, but the flavors and smells definitely remind me of the holidays. Now that I have gone “paleo-lite”, I won't be making traditional capirotada any time soon but with the help of Yoplait Greek 100 Vanilla, I can make a yogurt breakfast dish that's reminiscent of all the flavors of the traditional bread pudding. These capirotada yogurt cups are a treat the whole family will enjoy for breakfast and beyond!

I gathered traditional capirotada ingredients as elements of a yogurt breakfast bar: bananas, dried fruits, chopped nuts, and brown sugar. We set out all the ingredients and then spooned them onto Yoplait Greek 100 Vanilla yogurt in cups. Here's how to make this dish:

Each person in the family can then choose the toppings they want, mix them into the yogurt, and enjoy a hearty breakfast with flavors from our heritage. I love this simple idea because we can enjoy the flavors of the dish without all of the bread and prep work. This recipe also works great with Yoplait Greek 100 Vanilla in the larger container – just spoon the yogurt into bowls to serve.

A non-bread take on the traditional Mexican holiday bread pudding, capirotada.

Ingredients

Scale
  • 1 – 5.3 oz Yoplait Greek 100 Yogurt Cup in Vanilla or 1 Cup Yoplait Greek 100 Yogurt
  • 1 TBSP Raisins
  • 1 TBSP Chopped Pecans or Macadamia Nuts
  • 1 tsp Brown Sugar
  • 1/2 Ripe Banana, Sliced

Instructions

  1. Spoon ingredients into yogurt cup. Mix gently until the ingredients are distributed throughout the yogurt cup.

We stopped by our local Vons to pick up all of the ingredients for this fast, modern take on capirotada. Find Yoplait Greek 100 Vanilla in the dairy section of the store. You can eat this dish for breakfast or even as a dessert! My kids especially like it as an after school snack and my husband will eat it as a mid-morning pick me up while at work.
