The key to a successful tailgate or barbecue is making sure there's something for everyone at the party! With all the dietary restrictions in our family, its a challenge to find recipes everyone can eat but that have the authentic flavors the family loves. Since I started eating paleo, I really miss eating Chili Dogs and Mexican food, both of which are classic tailgating friendly foods. This Mexican Chili Dogs recipe brings both chili dogs and Mexican flavors together in one DELICIOUS dish that is perfect for cold fall nights with family gathered around, watching the big game. Who wants to be the person at the football game eating carrot and celery sticks? No way! Whether you're grilling in the backyard or tailgating at the local stadium, this Mexican Chili Dog recipe is a delicious, on-the-grill treat the whole family can enjoy. And without the bun and cheese, it's paleo-friendly too.
The authentic flavor-magic in these chili dogs happens when you combine HERDEZ® Salsa Casera, carne asada, and beef hot dogs. Yes, the chili is 100% homemade, on the grill, with HERDEZ® Salsa Casera and carne asada!
HERDEZ® Salsa Casera is a staple in our pantry because it is a fresh and delicious salsa, perfect with chips and guacamole but it can be used to add fabulous flavor to many dishes, like this beef chili. Get recipe inspiration and beef nutrition information at “Beef. It’s What’s For Dinner“. We chose organic nitrate-free 100% beef hot dogs to make this recipe friendlier for our paleo-eaters but still flavorful for everyone else to eat. If you want to make these “full paleo” then you'll need to skip the cheese and the bun. Pick up all the ingredients for these chili dogs and your next tailgating party at Walmart:
When we were kids, I remember tailgating in front of my grandparents' house. Everyone on the block would bring out their family version of macaroni salad, get corn on the cob or elotes from the street vendor, and trade baskets of avocados and fresh fruit.  The grills would be set up with the guys grilling in the front yard, listening to the game on the radio or bringing the food inside to watch the game on the big screen. My family was more of a baseball family but whatever the game, a hot dog or chili dog was the quintessential sports game food.
Whether you're in the backyard grilling like we do or tailgating out at the game, this recipe is easy to make, flavorful, and delicious!
Mexican Chili Dog Recipe
You'll need some gear to make this recipe, especially if you are packing for a tailgate:
- sharp knife
- tongs
- cutting board
- 8″-10″cast iron pan
- spatula or spoon
- can opener
- oven mitt
Make sure you bring the grill too. *wink wink* Let's get started:
Mix 1 jar of HERDEZ® Salsa Casera with the lime juice and carne asada steak seasoning. Rub into flank steak. Refrigerate at least 1 hour to marinate.
Place the steak over direct heat on a medium high grill.  Cook steak until medium, about 6 minutes per side.
Remove the steak from the grill and dice. Place a cast iron skillet on the grill. Add olive oil to the skillet. Add yellow onions and cook until translucent.
Add salt to taste. Add steak, chili spice mix, the second jar of HERDEZ® Salsa Casera, tomato paste, and 1 cup of beef broth.  Stir to mix. Simmer for 15 minutes until the chili thickens.
While the chili is cooking, grill the hot dogs and buns. Remove the chili from grill. Place hot dogs in buns and spoon chili over top. Add onions and shredded cheese to eat chili dog as desired.
