Growing up, on of my favorite dishes from my grandma was Sopa De Fideo. I've seen other recipes for this Mexican noodle soup but my grandma made it more of a side dish than a soup. This Mother's Day, I wanted to share a traditional Mexican meal with the family, remembering my Dad's mom and making new memories with my own kids. We recently started exploring making our favorite dishes with a vegan twist so why not with our Sopa De Fideo recipe? We substituted spaghetti squash for the noodles to make this dish gluten-free, vegan, and still absolutely delicious. Keeping reading to get the recipe and the details on how we're doing Dia de las Madres this year.
I went to 99 Cents Only Stores to stock up on cute plates and trays for Mother's Day and as soon as I walked in, I saw that they had spaghetti squash in the produce section.
Yes, whole spaghetti squash for only 99 cents each! When we started eating paleo a few years ago, we ate lots of spaghetti squash as a substitute for traditional pasta. We don't eat exclusively paleo anymore but I still love spaghetti squash and so does my mom. I am very familiar with how much they cost … they are usually $5 or 6 a piece! So you better believe I stocked my pantry when I saw them in the 99!

Vegan Sopa De Fideo Recipe
My grandma's sopa de fideo is a lot more like our Arroz Rojo recipe than a true soup. We always ate it as a side dish with tacos or tostadas and sometimes, we ate sopa de fideo as a stand alone dish. We're serving our Vegan Sopa De Fideo recipe with a sprinkle of chopped cilantro and a squeeze of fresh lime juice. The lime brightens the flavors of the tomato sauce in the dish and balances the buttery flavor of the spaghetti squash. Here's how to make it:
Ingredients (all available at 99 Cents Only Stores):
- 1 medium spaghetti squash (3 cups cooked)
- 2 TBSP olive oil
- fresh cracked pepper, to taste
- 1 small onion, diced
- 2 crushed garlic cloves or 1/2 TBSP chopped garlic
- 8 oz. can of tomato sauce
- 1/2 cup water
- 1/2 tsp ground cumin
- 1 tsp kosher sea salt
- lime wedges (optional)
- chopped cilantro (optional)
Directions:
Preheat the oven to 400ºF.
Cut the spaghetti squash in half lengthwise and scoop the seeds from the middle.
Line a baking sheet with parchment paper and lay the spaghetti squash halves on it, cut side up. Drizzle with 1 TBSP of olive oil, 1/2 tsp of kosher sea salt, and fresh cracked pepper.
Bake the squash in the oven for 60 minutes or until it pulls apart easily with a fork.
Remove the squash from the oven and allow to cool.
Use a fork to break up the spaghetti squash into strands. Measure 3 cups of the squash and set aside.
Heat 1 TBSP of olive oil on high heat.
Add onion and garlic, cooking until translucent.
Reduce to medium heat. Add the spaghetti squash and stir to heat through.
Add the cumin and tomato sauce. Pour the water into the tomato sauce can and then pour into the pot.
Simmer on medium heat until the liquid reduces.
Remove from heat and serve with chopped cilantro and a lime wedge.
Plate the sopa de fideo on a pretty plate and top with fresh cracked pepper, chopped cilantro and a lime wedge. This dish can be served as a second course or as a side to tacos or other traditional Mexican food dishes.
