Crock Pot Chile Verde for Tacos or Burritos
My family has long made chile verde and it has been a bone of contention between my dad and my youngest uncle as to who makes the best recipe. My uncle thinks he invented the recipe and my dad says it's their mother's recipe. My uncle has tried to trade the chile verde recipe to me in order to get my fudge recipe. Well, I made up my own recipe for chile verde and the fudge, well, he can just read the recipe off the jar of marshmallow creme. But shhh, he doesn't know that's where the fudge recipe is from, so don't say anything …
My chile verde recipe is super simple and you can make it in the crock pot. Why? Because good food does not have to be difficult to make. Fill tacos or burritos with this chile verde, eat it on a plate with rice and beans, or cook it up with some fried eggs the next morning for breakfast.
If making tacos, chop a little cilantro and onion and sprinkle on top of the tacos for crunch and color. Spoon the chile verde on top of fried eggs or wilted greens to make this dish paleo-friendly – just leave out the tortillas.
The chile verde can be really juicy so keeping Viva® Vantage® Towels nearby is a must for drips on your chin and on the table. Oh, and also on your shirt. What can I say, it's that yummy! Ingredients
- 1 Pork Roast (about 2 lbs)
- 1 TBSP Kosher Salt
- 1 TBSP Cumin
- 1 TBSP Black Pepper
- 1/2 TBSP Red Chili Flake
- 1– 16 oz Jar Salsa Verde
- 4 small red potatoes, cubed
- 2 cups chopped tomatoes
- 2 cups chopped tomatillos
- 1 onion, chopped
- 2 cups of water
- Cilantro as garnish
Instructions
- Pat the pork roast dry with Viva Vantage Paper Towels.
- Lay the roast in the bottom of the crock pot.
- Rub all of the spices onto the roast.
- Add all of the chopped vegetables and spices.
- Add 2 cups of water.
- Cover and cook on LOW for 6 to 8 hours or until fork tender.
- Serve in tacos, burritos, or on top of eggs.

Xaver's Secret Spice Guacamole
The secret to Xaver's Guacamole is Menudo spices. Yeah! One time we were having a party and ran out of all the right spices… but we had Menudo Mix. And so a new recipe for guacamole was born.
This guacamole is easy to make on the go and packs a powerful punch of flavor. The menudo mix is full of traditional Mexican flavors that are unexpected in a basic guacamole.

Churro Waffles ala Mode
Everybody is making churro everything! And then some of my friends started making cinnamon rolls in their waffle maker and it gave me an idea – Churro Waffles! You can make these to order at the party on a waffle iron or pre-make them, pack them for the tail gate, and heat them up on the grill to warm them. Serve with a dollop of vanilla ice cream on top for a delicious treat or wrap them in Viva® Vantage® Towels to keep your hands clean and eat the waffle alone.
